Lemon Pudding Cake

Ingredients

 

Original recipe (1X) yields 9 servings

  • 4 large eggs, separated
  • cup lemon juice
  • 1 tablespoon butter
  • 1 teaspoon lemon zest
  • 1 ½ cups white sugar
  • ½ cup sifted all-purpose flour
  • ½ teaspoon salt
  • 1 ½ cups milk

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 8-inch square baking dish.

  2. Beat egg yolks, lemon juice, butter, and lemon zest together in a large bowl with an electric mixer until thick and lemon colored.

     
     

  3. Combine sugar, flour, and salt; add alternately with milk to the lemon mixture, beating well after each addition.

     
     

  4. Beat egg whites in a glass, metal, or ceramic bowl until stiff.

     
     

  5. Gently blend egg whites into batter on low speed with an electric mixer. Pour into prepared baking dish.

     
     

    Place a pan of hot water in the preheated oven; set the baking dish into the pan; bake for 45 minutes. For best results, serve warm.

Easy Strawberry Shortcake

Ingredients

 

Original recipe (1X) yields 6 servings

  • 1 quart fresh strawberries, sliced
  • ¼ cup white sugar
  • 1 (12 ounce) package prepared sponge cake dessert cups
  • 1 (7 ounce) can whipped cream, or to taste

Directions

  1. Place strawberries in a bowl; add sugar and stir to coat. Cover and refrigerate until sugar has dissolved, about 15 minutes.

  2. Place 1 dessert cup in each serving bowl and smother with strawberries. Top each with whipped cream.

Lemon Curd Tarts

Ingredients

 

Original recipe (1X) yields 15 servings

  • ¼ cup lemon curd
  • 1 (1.9 ounce) container frozen miniature phyllo shells, thawed
  • ½ cup frozen whipped topping, thawed
  • ¼ teaspoon ground cinnamon, or to taste

Directions

  1. Spoon 1 teaspoon lemon curd into the bottom of each phyllo shell; top with whipped topping. Sprinkle a light dusting of cinnamon over the top.

Cocoa Powder Chocolate Mousse

 

  • 1 1/4 cup heavy cream
  • 3 tablespoons unsweetened cocoa powder, or more to taste
  • 1/3 cup confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 1/4 teaspoon almond extract (optional)

Directions

  1. Combine heavy whipping cream, cocoa powder, powdered sugar, vanilla extract, and salt a large bowl and beat with an electric mixer until stiff peaks form.

  2. Pipe mousse into 6 shot glasses. Serve immediately or chill until serving.
